Syrah grapes undergo a lengthy maceration of more than 15 days in temperature controlled vats . This process leads to the extraction of the most noble components and obtains light concentrations of tannins. This Txakoli has been<br /> aged for twenty months in a vertical ovoid concrete tank in which it¿s yeasts<br /> or lees spontaneously move around in a smooth surfaced space due to the<br /> thermal oscillations of night and day.
Varietal composition: 100% white moscato. Wine making process: hand picking of the grapes. Soft pressing and alcoholic fermentation for 10/15 days at 16-18°c in stainless steel tanks. Do not age. <br /> Colour: straw pale yellow with a slightly perlage. Bouquet: characteristic of moscato grape. With a hint of sage, melon, passion fruit and white flowers.
